The winners of the Boiron Frères Young Talent Trophy – 3 returning and 3 ready to leave – met in Paris in a friendly and festive atmosphere. Two days of intense sharing with Raphaële Marchal, godmother of this 3rd edition.
“They are so moving … so young and already so much to share!”: cry from the heart from Raphaële Marchal, culinary blogger and godmother of the Trophy since the last final where she was one of the jury members.
Valentine, Pablo and Félix, winners of the second edition, finished their Trophy year while Marie, Margaux and Damien were getting ready to leave enthusiastically for Belgium, Germany and Norway respectively with Ferdy Debecker, Bocuse de Bronze in 1999, Claus Weitbrecht, Bocuse de Bronze 2003 and Ørjan Johannessen, Bocuse d’Or 2015.
A year of training, full of new culinary practices, products to discover and cultural meetings supported by prestigious chefs, “who have worked to get where they are and who have all remained so human and generous. It is an extraordinary chance to be able to work alongside them.” : assures Pablo.
For the traditional end of June logjam in Paris, Les vergers Boiron team had prepared a genuinely delightful cocktail dinner. A dinner in the dark, an unusual sensorial experience, which didn’t totally disarm these refined palates capable of recognising virtually 100% of the dishes and flavours. The next day, Raphaële Marchal made a particular point of giving her tricks, the best way to describe in words and pictures, a place and a chef. She took as a training subject the delicious Mirabelle coffee of Marion Goettle, a very young Alsatian chef in Paris, already at the head of an establishment where she puts in practice all of her convictions around delicate home cooking without any waste. In the evening, we met at the Brasserie Urbaine at the Molitor Pool, the mythical “white liner hotel” for a new evening with everyone gathered around dishes to share and cocktails on the roof top. The logjam ended the next day with filmed interviews of the experiences of the returning winners Valentine, Pablo and Félix and a tasting of specialities brought back in their suitcases, particularly typical for lack of being gastronomical!
